I have a lot of categories. The list is not sorted alphabetically (it does not seem to be in order of creation, either) so I cannot easily find the categories I want to select.

Yeah, you’re right. Looks like it matches the “Most Used” tab of the Classic Editor. Another bit of lost functionality with Gutenberg. An alphabetical listing should certainly be there.

This is correct, we are looking at better category management in https://github.com/WordPress/gutenberg/issues/2607, any further input, if not already covered there, would be best posted on that ticket 🙂
