If the ShopEngine plugin is disabled, that means it has no effect on the default WooCommerce functionalities or pages. If the ShopEngine plugin is disabled, then the default Archive template of WooCommerce is supposed to work. Please check this screenshot for a better understanding.
Since it is working correctly in my development environment, maybe the archive-product file of WooCommerce on your site is overwritten or something happened to the Archive template which is why it is not working. You can try changing the Theme to Hello Elementor or 2020. I hope it will help you to figure out what actually causing the issue.
If that doesn’t help, then it will be better to consult with the WooCommerce Authority as the ShopEngine plugin is not involved in this matter. I hope the WooCommerce Support team will show you a way to solve this issue. I hope you can understand the matter.
