you can change the add to wishlist / add to cart icon with any of the fontawesome default icon from Colors Tab
Check the image for further information
(Please, make sure “Use buttons” checkbox is checked and “Use theme style” unchecked, in order to see the icon options)

I have updated the icon as you suggested but the star is still appearing no matter what icon I choose! I cleared my cache and I even uninstalled the plugin and reinstalled it, but it won’t change from the star. Any ideas? Thank you.

Maybe your theme overwrite default templates, adding its own icons? Can you please search for wishlist.php or wishlist-view.php files in your theme root, or under /woocommerce subdirectory?
Otherwise, can you plesae try the plugin with the default theme?
