I need to change the text on the subscribe button, but can’t find an option for this in either mailchimp or the Yikes plugin.

Can somebody tell me how I do this?

Changing all the various default text and messages is on our to-do list for future updates to the plugin. You can take a look at our to-do list on Github: https://github.com/yikesinc/yikes-inc-easy-mailchimp-extender/issues

The option you want falls under Multi-language support:

Thanks for the response, I managed to fins it amongst the files and changed it.
