Sorry but you’re asking for three completely different things here. Your best approach might be to use Firefox with the Firebug add-on installed so that you can see which parts of the stylesheet you need to edit.

The gray headers and titles for categories can be edited in style.php, not style.css. (Yes, strange!)
I suspect the post background can be edited there also, but I really don’t know.
