    Does your plugin allow to load map tiles from my own server instead from OpenStreetMap server / does the plugin support changing the OpenStreetMap tile server?

    No, you can only change it in the coding, but this will break with the next plugin update.

    but I can use it in a child theme, right?
    Then that would not change with an update?

    WP OSM Plugin can be used with child themes, but the code to change the tiles is in the plugin and has to be made manually after every plugin update.
