If you are talking about the text box background click the Box icon on the floating menu and select the color from “Background Color”.
Page backgrounds are part of your theme, however the Extended version has blank pages that you can change background colors of the page.
For changing theme options go to Appearance –> Customize in wordpress admin.

BTW, the theme I use is Weaver Extreme 2, have you any advise regarding that?
One more thing: Tried switching to another theme and go the same thing using that. It’s not the theme, it’s the plugin. At present you get a black background, when what is needed is a white background. Simply Symphony needs more work.
It would more likely be a conflict with another plugin you have installed.
Also old IE version 5-11 will not work with the editor.
Need Newest version of FireFox, Chrome or IE Edge.

The bad news is, the people who insist folks use IE 11 refuse to update to Windows 10. Something about the cost. No, not about the cost of the OS, but the cost to them of taking the time and effort to upgrade.
