As with your other thread, this is more of a MailChimp support (rather than plugin support) sort of question but I’m happy to provide a little info.
Due to how checkboxes work in MailChimp, they automatically function as Groups and they are not able to be made required on most forms, including this plugin. Only on our new pop-up form can Groups/Group fields be made required:

However, based on your other post I would recommend perhaps using an alternate field type instead of a check box.
