This is more of a MailChimp support (rather than plugin support) sort of question but I’m happy to provide a little info on that. Field labels which appear alongside form fields are always going to be limited in length in MailChimp:

In order to have additional text displayed alongside/within the form to clarify the Terms & Conditions agreement, it may be necessary to use and customize the embed form code instead:
