Did this change happen recently, or the store has just been published?
Kindly check the options set up, under WordPress > Settings > General > Date Format. Linked here is a screenshot showcasing how I have my testing site set up.
Feel free to change the settings there, and place a test order. Does the issue persist?

I’d like to understand your site properly, please share your System Status Report that you can find via WooCommerce > Status. Select Get system report and then Copy for support. Once you’ve done that, you can paste it into your reply here.
