When you open a post, select Post > Discussion > Closed.

You have a different theme than I do. I have the Astra theme. There is no option for Post/Discussion/closed.
I went into the discussion selection on the side bar and there’s no option for it.

That is strange. I installed and activated the Astra theme and was still able to close it: https://cloudup.com/cuXi6lD6yq1
There might be a plugin intefering. Have you updated your site to the latest WordPress version? Can you share a screenshot of what your post + sidebar looks like?
This is what my sidebar looks like to the left of my posts.

Yes I have the latest plugins and Astra version.
But what does it look like when you open a single post and open the sidebar settings on the right as in my example? You can create a dummy post for the example if you wish.

I see you are using the Classic Editor.
You can turn off comments for individual posts by selecting Quick Edit on the post you want to update.
