    Instructions

    Spread Monterrey jack cheese and half of the cheddar over bottom of pie shell. Sprinkle diced chilies over cheeses. In a bowl, mix the half & half, eggs, and seasonings. Pour carefully into pie shell. Sprinkle with remaining cheddar.
    Bake uncovered 325 degrees for 40 to 50 minutes or until set in center.
    Two options for making ahead: 1. Before baking, cover with foil and freeze. Thaw before baking, and bake as directed. 2. Mix the half & half, eggs, and seasonings and put into baggie & freeze. Mix the cheeses in baggie & freeze. To make, thaw the cheese & liquids and assemble & cook as directed.
