    According to GTmetrix the combined-css file is render-blocking.

    I’ve been trying to figure out why the site from an A to a B rating in GTmetrix (and whether that has to do with switching to Gutenberg).

    Yes, the combined CSS file is render blocking and it has to be. If you load it asynchronously your site will load without the styling and then you will glet a blink which will generate a lot of layout shift plus is very bad UX.

    Don’t follow Pagespeed for the sake of score but for your users. Plus, I am not sure the CSS being render blocking is the reason you’re getting lower scores. Your site is loading great, the mobile score is always lower since it simulates slow mobile connection.
