I have seen a number of plug-ins out there for anti-spam control but was hoping someone might give me link to what one seems to be the best.
Try Akisemt, it’s by far the best. The plugin should have been included with WordPress. If not, you can get it here: http://akismet.com/
I see plenty of sites out there were the person can put in their name, email, website, comment and usually a code and then the comment appears on the site with no waiting. Is this possible without fear of spam on WordPress?
Yes, they’re called CAPTCHA, and there are quite a few:

However, CAPTCHA are seen by many prospective commentators as an inconvenience not worth their time, and many popular CAPTCHA have already been broken by spam bots: http://caca.zoy.org/wiki/PWNtcha

Due to only getting to my site once per day in the evening I only get that one chance to approve or disapprove a comments and would quite like to take away the comments to approval setting but about 90% of the comments I receive are spam hence why I have it on in the first place.
