Most likely, your theme is offering its own [table] Shortcode.

It sounds like to be a great solution to solve the problem but it seems that the extension can’t be activated on a multisite installation. The extension is not showing in the WordPress Extensions menu, so I can’t activate it.

there should not be a problem with installing this on a Multisite.
Just install it like a regular WordPress plugin (i.e. download the ZIP file, and then install it via the “Plugins” -> “Add New” -> “Upload” method). Alternatively, extract the ZIP file and upload the resulting folder to the /wp-content/plugins/ directory.

This is exaclty what I did but the extension “tablepress-change-table-shortcode” is not showing in the extensions page so I can’t activate it.

are you sure that you don’t see a “TablePress Extension: Change Table Shortcode” plugin there?
The plugin is very, very simple, so I don’t see any reasons why it shouldn’t be showing. Can you maybe try the other of the two installation methods instead?
