Contact sender notification email causing reply issues

I have a contact form on my Web site. When I change the entry in the Contact Sender Notification section to “[email]”, I am able to receive the sent message from the contact form (Microsoft Exchange email; webhosting through GoDaddy) BUT the sender does not receive an email acknowledgement (I have Pirate Form set up to do so). If I change the Contact Sender Notification section to MY email (my [email protected]), there are 2 issues:
1. I receive the reply from the form, but it always goes to my Spam folder
2. The acknowledgment does get sent, but (of course) it shows MY email rather than the sender’s. It also indicates that it came from a page that does not even contain the contact form.
I have searched the forums, updated to the latest versions of WP and Pirate Forms. I am not a programmer and just a keep trying it ’till it works kind of designer but I can’t get this to flow correctly. Suggestions, PLEASE and thank you.
