Kindly check your PHP error log and let me know if you have any error logged there.
Also how were the emails triggered?
I do have Error Log Monitor installed and the PHP Error log is blank since I cleared it yesterday. No errors being generated during testing of Email Log.
Emails I am seeing are being sent from bbPress and also BuddyPress through the usual WP method. They are arriving OK, with their content.
I am using Email Log because I seem to have a problem with notifications from BuddyPress. But if I sent a private message to another BuddyPress user, the email notification does get sent correctly, is recorded by Email Log but the content field is blank.

I have just re-enabled the Subscribe2 plugin and made a post to force WP to send an email other than through BuddyPress. The email arrived OK and was logged by Email Log.
The content is viewable, and so now is the content of the other emails sent from BuddyPress! Somehow, sending an email from WP itself rather than BuddyPress has cleared something. Very strange.
So it look like I am back in business. I will let you know if I get any reoccurrence.

Mystery solved, if not the plugin problem.
I did my successful testing on another test site and I have now found that I installed there the plugin ‘Log emails’ and not ‘Email logs’. Confusion because ‘Log emails’ titles its log page Email logs.
I continue to have the problem with ‘Email logs’ but ‘Log emails’ is working fine for me and I shall run with that.
