Hi. I would just like to know if there is a way to have a selection box in the same way as categories but that would allow us to assign our access level when we create new content instead of going back and add the content on the access level groups management page.

That is a great idea, but currently not possible. I have added it to my todo-list 🙂
1 way to achieve it now is to add access conditions for categories/tags/authors, which will then automatically restrict the content with those.
Update:
I forgot that there is another way to do this as well, but it will only work for sub-pages of restricted content:
1. Go to edit the access level
2. in the specific access condition group, click on Settings
3. Enable the option “Auto-select new children of selected items”
4. The next time you create a sub-page of content already restricted in this group, it will be restricted as well
