In brief answer to your questions, the Excerpt options are global and can be found under Easy Testimonial’s Display Options (screenshot here: https://goldplugins.com/wp-content/uploads/2017/02/screenshot-4.png)
To output a master list of testimonials, use the [testimonials] shortcode (with further information here: https://goldplugins.com/documentation/easy-testimonials-documentation/easy-testimonials-installation-and-usage-instructions/output-a-list-of-testimonials/)
In general, we recommend using the Shortcode Generator to build your list shortcodes.

One additional question that I am not finding in documents – is there a way to set the max height for a fixed widget? I’m out of space and need the testimonial to be maxed out a certain height but I’m not finding how to code that correctly. I have found width but not height. Thanks for your help Richard! Great plugin!

We don’t have a way to set a height, specifically, for a fixed widget.
Usually I would recommend using Excerpts and choosing a word limit that keeps things to the height you’re looking for. You could combine that technique with a bit of Custom CSS to set the pixel height, if needed, and that may do it for you!
