To retain the Sydney theme’s header and hero slider, you should enable the Front Page template on your Elementor page’s settings. See this screenshot.
Also, ensure the full screen slider is enabled for your pages. The theme’s option for this is located under Appearance menu > Customize > Hero Area > Hero type.
I have the new page setup as “FrontPage” like the screenshot. The Full screen slider is enabled because it is working on the original home page.

Please check your current setting for Site header type under Appearance menu > Customize > Hero Area > Hero Type. Ensure Full screen slider is enabled for it.
Appearance menu > Customize > Hero Area > Hero Type. Full screen slider is selected and so is Site Header Type is image.
FYI – the eliminator page https://www.nolimitscafe.org/nlc/ is showing the header from non homepage setup.
Also reconfirmed that the https://www.nolimitscafe.org/nlc/ page in eliminator editor – General Setting has Page Layout “Front Page”
