No problem. You don’t need to copy anything. Just create a new blog ‘es’ in your multisite.
And how can i create this blog?
I don’t see something like that. Is it a new site?

I created a new site called: xyz.de/es/
but still i get the message “You should define at least another blog in a different language in order to have some benefit from this plugin!”
The plugin settings are rather simple (in the Administration Menu -> Settings -> Multisite Language Switcher). You need to activate the plugin once in each blog : click « Save » at the bottom of the settings even if you haven’t changed anything yet. It’s the only way for the plugin to offer the necessary flexibility, regarding each language for example.
