Hello,
Once you filled in every fields under section “Instance settings” and clicked button “Update instance settings” you will need to click button “(Re-)Create the index” in the “Index settings” section.
You will then need to click button “Synchronize / Re-index” (in “Indexation” section) to fill your index with existing data from your wordpress.
If you are doing all these tasks and you still can’t see index in your OpenSearchServer instance please try to enable PHP logs on your wordpress server and check if some errors related to our plugin occur.

I managed to get that all figure out. Now my next question is how do I get WordPress to use the plugin Search instead of the default WP search?

When enabled, this plugin will automatically replace default WP search engine.
It will automatically index new post / page to your OpenSearchServer instance and automatically query this instance when you will run a search via default search input of your front office.
Do you encounter some trouble at the moment? Is it not working as expected?

The side list labeled content led me to believe that it was not working correctly but in fact it is working as it is not displayed on the direct OSS render page. Is there a way to remove that column?

I’m not sure to understand which “side list labeled content” you are talking about. Is it a “facet” on the search results page?
You can remove all facets from the plugin administration page, in “Query Settings / Facets” section.
