It sounds like you’re looking to bulk edit your products and their variations. You’re right, manually editing each product can be quite time-consuming.
You can indeed cluster your products and import them using a CSV file. Furthermore, you can add fields and values in the CSV file and then import it into your WooCommerce backend. Regarding ACFs (Advanced Custom Fields), these are used to add extra data fields to your WordPress edit screens. They can indeed be connected with attributes, which are essentially characteristics of a product, like color, size, etc.
If you’re unfamiliar with them, you might want to check out the ACF documentation or consider hiring a developer to assist you.

That seems like a lot to read at the moment and doing this manually at the moment might be my quickest option as I have a deadline and I am already in the thick of it.
