Custom Headers

How can I create custom email headers based on the data submitted in the form? I’m sending forms to OTRS, which can Do Magic(tm) with headers.

For example, I might set a header X-OTRS-Queue: $QUEUE in the email, and OTRS would route the email to the queue indicated in the variable (which would be a populated via a field in the form).
