I’m glad you’re finding the plugin useful!
Custom icons have actually been on the todo list for quite some time. The priority for that issue went down quite a bit once auto-generation for documents was supported, but it’s still on the list! 🙂

Document Gallery will generate thumbnails for any attachments included in a gallery that it understands. You can enable different thumbnail generation methods on the settings page Dashboard -> Settings -> Document Gallery.
