Aside from setting a book page as a static front page, your book posts should work just like regular posts. It’ll show up in admin menu, you can get a book list admin screen, the edit link in the admin bar works, etc. If you are not seeing these things, visit the Permalink Settings page to setup the book’s rewrite rules. You do not need to do anything, just visit the page. You could click the Save Changes button if that helps, it shouldn’t matter.
Most decent plugins should pickup on your book post type., I know Yoast will. ACF should too if you add ‘custom-fields’ to the registration’s ‘supports’ array, but I’ve no direct experience with ACF.
You cannot pick custom post types from the static front page list, but if you go to /wp-admin/options.php (no link, you have to type it in) and add your desired book front page’s ID to the ‘page_on_front’ option, it will show up as a front page. I don’t know how well it’ll work, other adjustments may be necessary. For one thing, WP rewrites front page requests to the page’s permalink instead of just your domain name alone. I’m unsure how to prevent this, but there is likely a way.
