Thanks for the topic.
I want to mention, that the Quiz Maker plugin offers 2 addons which might be used to achieve the scenario you want.
You can either use the Category Selective Addon to let your users to choose how many questions from each category they want to answer.
Or, you can use the Generate Quiz Addon to help users generate their own quizzes right from the front end. The needed categories/quizzes will be displayed, and all the users will need to do is select categories, choose the question count, set the timer, and click on the generate button.
