The date format in email notifications is based on the date format for your general WordPress settings. You can change this under the overall site Settings > General.

Hi marcobooo,
If you’ve definitely changed the date format in your WordPress settings (and not just under Bookings > Settings), then you probably have a plugin or a theme that is interfering with the date/time functionality in WordPress.
The best way to diagnose this is to deactivate all other plugins and switch to a default theme, like TwentyFifteen. Then you can test as you reactivate them one-by-one until you find the problematic plugin.
