Date and Time Problems – Timezones?

Hi, I’m having a strange issue with WooCommerce that I’ve posted about here:

I’m not sure which plugin could be causing my issue, but since WordPress 5.3, a lot of date and time core code has been changed (poorly handled by WordPress developers), and I’ve noticed that Woo Delivery is using some deprecated / dangerous functions (like date_default_timezone_set()). Has anyone else using Woo Delivery run into this problem?
