Yes this is possible:
1) Create this as a ‘normal’ contact attribute within your Sendinblue account: https://help.sendinblue.com/hc/en-us/articles/209499605
2) Create this a field in your form:
+ To create a form in your Seninblue dashboard and share via iFrame see:

+ To create using the Sendinblue WP Plug see:
https://help.sendinblue.com/hc/en-us/articles/208849249
3) Map this data to sync with Sendinblue – Match the field with the attribute you created in Sendinblue
NOTE: Sendinblue supports two date formats, ie MM/DD/YY, DD/MM/YY – you can adjust the date format default from the Sendibluye dashboard: Settings>Default Settings> Date format
