Sorry for the inconvenience. It can be a problem of conflicting with scripts.
But I have tested and found no issue with, WP: 4.7.3, WC:2.6.14 and WUP: 1.5.1 version. Can you please share your site link and if possible make ‘sk.shaikat18 at gmail dot com’ this a shop manager so that I can debug the issue and provide you best solution.

Sorry for the inconvenience, maybe there are some javascript error on your site from other plugin or may be the theme. Which causes the issue to convert the date value.
Here I have a custom solution for you. please follow these 3 steps:
1. Open the plugin main page woocommerce-upcoming-product.php in editor. you can open it by navigating plugins > editor.
2. Go to line number 400. you can also find it by ‘Ctl+F’
3. Replace the line:
<?php echo date_i18n(get_option( 'date_format' ), strtotime($_available_on)) ; ?>
by
<?php echo $_available_on; ?>
This will solve your problem.

You might have an issue with auto available product. It’s because of the date language issue. I am still working on it. Hope will fix that soon. wish me luck.

I have the same problem. But if on the admin page, I type the date in english format (MM/DD/YYYY) it’s working ! So it’s clearly a problem of the tool which is here to pick the date with is not working.
If it can help you, I use Loco translate to translate my plugin into french.

I set date of upcoming product as 1st Nov 2017. Then website was made live and url etc were changed for all products and everything looked fine…..but. Recently I wanted to change date of upcoming product to 25th Nov 2017, but it is not getting changed. I am not even able to remove this feature from product. I had to deactivate this plugin then only it stops showing. I had removed and reinstalled. Tried updating product without this plugin and then again installed but date is not getting changed. What to do…?
