I checked your site and I can confirm a Site Kit placed snippet without modification, which is working as expected, see this screenshot from the tagassistant.google.com service. By default, with consent mode enabled (which is the case with your Site Kit configurations), consent from traffic from EEU regions, the UK and Switzerland is considered denied and users visits will not count in Google Analytics until they explicitly grant consent with a consent management plugin. If you’re based in an EEU country, this is likely the cause of your reporting not counting your own visits.
I did also go ahead and check your consent managment plugin and whether my own site visits (from an EEU country) are tracking once I grant consent, and they indeed are. This confirms that both Site Kit, consent mode and your consent management plugin are configured and working as expected.
