This is only with this plugin possible, if you use the custom options of the plugin, not each areas in the “screen options” are automatically in the options of Adminimmize. But you can add the seelctors of this areas to the custom options.
A alternative is custom source, without this plugin.

I saw the FAQ, but I can’t see any tutorial or instructions on how to do what I’m asking. All I see is a comment from someone but it makes no sense to me.
You should find a css selector from the area, there you will hide. Use the webinspector of your browser to find it.
After you have this, add it to the “own options”, like the how to in the FAQ, the simplest is the answer in this thread.
Oh, I’m not trying to simply hide something using css. I’m trying to change whether the option is “checked” or “unchecked” by default for specific user roles. I’m guessing this plugin won’t help with that?
That is not the possibility of this plugin. Adminimize have only the goal to remove areas, items form the Admin Area to save the work for each user.
