Could you confirm if you are trying to update the attributes from the products from WooCommerce?
Or are the value fields not being synced to Google?
Google Listings & Ads will automatically sync your WooCommerce product data to Google Merchant Center and you can add or edit your products individually or in bulk. More information can be found here

All my products are the same, just the design changes … so all information when I expand the variations / one variation / Google Listings & Ads
I would like to see all the fields filling by defaut. So I need a settings page where I can define all the information except the GTIN y MPN number

I would like to see all the fields filling by default.
Do you mean you want the settings pre-filled with the values you added above by default so that they sync to Google without any adjustments from you?
If my understanding above is correct, please refer to the recommendations below.
These fields data would need to be entered separately for each one. An import or update workflow using Product CSV Import Suite or similar may be able to help you import or update products with these fields filled out faster than doing it manually.
If you want help getting the data in your system in an automatic way, someone on our customizations page may be able to assist.
