I have a lot of products that I was hoping there was some way to default the condition to new and the availability to be ‘in stock’ so that I don’t have to update each product with the info.

Unfortunately, WordPress does not manage product data by default – you would need an e-commerce plugin to manage product data, and the Pro version of WPSSO Core to integrate with that e-commerce plugin (and get the availability info). If you eventually choose to use WooCommerce and the WPSSO Core Pro plugin, you can add a condition attribute for your products.
