I have also logged in as an instuctor and created a course – but when i try to add a student to it i get the error – Sorry, you are not allowed to access this page.

Please see that in order to delete course you should go to Dashboard> MS LMS>Courses and there you will be able to delete any course [screenshot] .
Regarding adding students to the course by instructor, please see that there might be restrictions in permissions. Please follow the link to learn more.

I have added the ‘capibility’ plugin but im not sure how to allow instuctors to add students and delete courses. its not very clear. Screen shot here – https://thecollegeofrugby.com/1-2/
Also when logged in ad admin, i try to add a new user, I cant select ‘admin’ role for them. Its not there.

User roles are not related to the plugin at all, please try to contact your hosting provider and ask them to check.
Instructors and Admin by default are able to delete courses, Admins can delete any courses and Instructors can delete only their courses.
Try to re-check it by deactivating 3rd party plugins.
