different checkout forms

I have a project where the client wants to have 2 different checkouts (or at least two different checkout options).

1 checkout is for regular products, with nothing special

2nd checkout is for specific products (by category?) would have other fields and steps not found in the first checkout that would include fields about customization, screen printing, logo upload function among other things…

Is such a thing possible? or does it all have to be on one form with all the options always there?

I know there are a bunch of plugins that let you add in fields to checkout but anything like how I describe?
