Is it possible to change the size for each gallery? Because I would like to use it on both full width pages and pages with sidebars

You can set the width to 100% to make it variable.

Just keep in mind, when using images from the media library the carousel will always select medium sized images so make sure they are dimensioned large enough not to be stretched on the larger display.
