I am designing a site for a hotel, is there a way to have the plugin setup so that people can search for available dates for the specific hotel and not just the resort / city?

maybe in the future the search box will have this feature too.

Actually, in order to get a specific form for a specific hotel,

you can easily implement it using the Booking Button.
