I’ve looked at that document. The items you’ve pointed out in your theme are not categories but custom post types. WordPress comes with some default post types like Posts and Pages, WooCommerce adds the Products post type and your theme adds even more.
As they are custom post types, they are capable of having their own categories, as such, they can’t make use of the categories attached to the Products post type.
It’s kinda like trying to use Toyota parts in your BMW.
You’ll probably have to rethink how you’re approaching this.
