Theoretically, the shortcode you added is incorrect: you used ” instead of “. Can you try the following?
[jobs categories="ausbildung"]
I trust that “ausbildung” is a job category already added from your backend, and you’re using the slug of the category and not the name of the category. If you’re unsure, visit Job Listings > Job Categories in the WordPress dashboard. “Slug” is one of the columns.

Can you confirm if the 3 jobs matching the categories are still active and published, confirming they are not expired?

Could you try using a different category to check if the filter is broken across all categories?
Could you try these steps to temporarily disable all plugins and revert to a default theme?
- Install Health Check plugin on your site
- Download and install Twenty Twenty-Three on your site if not installed already
- Go to Installed Plugins. Click Troubleshoot on WP Job Manager
- Try viewing the jobs page with the category filter
- Once you are done, go back to wp-admin and disable troubleshooting mode through the top bar.
