Is it possible to display a random image from a gallery on a page? Or is this something that I would have to code myself?

You can do this using the shortcode attributes. More info can be found here : https://fooplugins.com/documentation/foogallery/troubleshooting-foogallery/shortcode-attributes/

You can limit the number of thumbs to 1 and just make sure the sorting of the gallery is set to random. Please be aware that random sorting is not possible if your site is being cached.
