Yes, WC can be used without marking orders as completed, but the owners will need some other system to keep tabs on which orders have been dealt with. If more than one person processes orders, how can the others know which have been completed. Maybe they have so few they can use their memory, but why not use the WC system. It also keeps track of unpaid orders, refunds and other stats if its used as intended. Best not to have two systems if one system will do!

@lorro I agree with your sentiment, but I can’t convince them to bother to sign in and properly manage their orders. To me it seems like the best way to do it.
But to be clear, the money will go through Stripe without any issue if untouched?

Do they need to actually process the orders for the payments to be sent through – or are they okay to just send the orders via the confirmation emails they receive?
Technically, this is possible. Store owners can do the shipment via the Order Confirmation Email without having to log in to their WooCommerce store.
However, as mentioned by Lorro above, how would you track what orders have been shipped or completed already if you won’t update the status under WooCommerce > Orders?
If they find it cumbersome to log in to their store, you can introduce to them the WooCommerce Mobile App where they can manage their store using their mobile phones or tablets anywhere as long as they have a stable internet connection.
