If you need to edit contacts one by one (the email address change seems a change you can do it as a one-by-one basis), you can select the contact name instead of selecting it with the checkbox (which is indeed more useful for in-bulk based changes).
When you click on the contact name, you should land to the main contact page. Select Contact Actions → Edit contact (first option in the list) and you should be good to go.
