thanks for these screenshots! It seems that for some reason your browser has trouble loading the so-called CSS style files from your server, maybe due to some interference.
Can you therefore please try again after temporarily deactivating all other plugins and after switching to a WordPress default theme like Twenty Sixteen? That way, we can find what’s causing this.

Unfortunately, this is not my own site that I’m working on, so I didn’t want to go through the steps of deactivating plugins and reverting to a default theme.
I have chosen another plugin which is editing without issue.
However, I will still use your plugin as my default, I use it without any issues on another site!

I’m afraid so.
Absolutely everything else in the backend was rendering properly, it only went to those blue text screens when I clicked Edit Table.
I tried four different tables and all the same.
I deactivated, removed, reinstalled your plugin too and still the same.
Very odd, because it was working fine last week when I first set up the page.
Any plugins I’d installed since, I deactivated and still the same 🙁
