Edit imported demo XML file

Hi there I am developing a purchased theme and have imported the theme demo.xml file, the problem I’m having is that some of the info from the xml file is proving difficult to edit. I want to change the title of the blog from “Blog” that is on the demo.xml file to something more descriptive, however I have no idea how to edit an imported xml file.

Any help would be appreciated.
