Have you reached out to Elementor support at all yet? As they’d be the better source to go to for why their archive template setup isn’t querying for things properly.
That said, just in case, have you set the post type’s “show in search” to false? If yes, you’ll want to set that back to true because for whatever reason, that setting also dictates if it shows in taxonomy archives.
We have a docs article about this over at https://docs.pluginize.com/article/exclude-post-type-from-search-but-retain-taxonomy-archive-listing/

I set “Exclude From Search” to True and it completely removed the archive from the search. So, it needs to be set to False.
Now when I search item or want to see an archive, it shows, but not with the design I created with the Elementor template. I see the default, ugly result page.
I know we have https://docs.pluginize.com/article/exclude-post-type-from-search-but-retain-taxonomy-archive-listing/ for how to exclude a given post type from search a different way while retaining the archive inclusion.
Regarding how search results display and the integration with Elementor, we don’t do any dictating of that. That’d be up to the theme used as well as Elementor.

I think it’s an Elementor issue. The Template system doesn’t work for default posts either.
Interesting and sounds good.
