Let me pass to your questions one by one:
1st How do i choose what information is sent to what email as I do not want to send all info.
In the email options section, you can choose what should be sent to user and what should be sent to the Administrator, you can add custom text and play with form fields. If you mean different email content should be sent to different Administrator emails, then by default this is not possible, but we have conditional emails add on with which you can set a condition to send email to different administrator emails depending on what the user will select. 2nd once information has been sent I want to delete that information.
To delete from where? Automatically it can’t be deleted, you should enter and delete manually.
3rd, How do I restrict the same phone number from being used more than once?
