Emails from formidable unreadable

Our website uses a fair number of formidable forms, all with an email action set up (going to a range of users).
Recently emails have been arriving garbled.
Our tech website support could only suggest changing the email addresses they went to, but this has no effect (unsurprisingly).
I’ve no idea how to even start resolving this so would be grateful for help to a novice.
