Yes, that is correct. HTML is stripped/sanitized from those fields.
An alternative would be to use the Ultimate WP Mail plugin (https://ww.wp.xz.cn/plugins/ultimate-wp-mail/) to create a more advanced email template. This plugin integrates directly with Status and Order Tracking, so you can choose any email that you created in Ultimate WP Mail for use in Status and Order Tracking.
Once you install and activate that plugin, you can follow these instructions to create an advanced email template:
– Go to the emails plugin
– Click on the emails tab
– Click on Add New
– Give the template a title
– Select your layout
– Input your email body message and replace the shortcodes with their respective email variables
– Save your template
– You can send out a test email by clicking on the Send Test Email on the right side
– Go to the tracking plugin
– Click on the Statuses tab
– Update the email(s) for your status(es)
Alright thank you for the information, ive started using the Ultimate WP Mail plugin but how can i link the client information now like the [order-name], [order-number] or [order-status] to the Ultimate WP Mail plugin?
You can add Status Tracking Variable Tags via the email editor. Please have a look at these screenshots for reference.

Hi,
I tried this and it does send the email but my wordpress logs a bunch of php and mysql errors as soon as the email is sent.
